The best way to grill liver is to cook it in two stages. The plan was to use one of our handleless Tefal pans as a plancha on our Mini BGE. The pan was removed and the now cooked liver was put directly on to the very hot grill. Charring and Grill lines appeared almost immediately! The final grilling of the liver can be done as everyone arrives at the table with some lovely grill marks on the meat. Set up the Big Green Egg for direct cooking with the stainless steel grill in place. In a handless pan or on a plancha add some olive oil and put on top of the grill. Remove the pan or plancha and place the cooked liver directly on the grill until they take on some colour and grill marks Serve straight away with a green salad and the warmed olives and cooking oil.

Grilled until golden on the outside but still rosy and tender inside, it is truly luscious. When you prepare this dish, marinate beef liver before cooking it. By marinating it, the meat will become tender and the flavor will mellow to make a delicious beef liver meal. To make the marinade: Juice the lemons and place the juice into a glass bowl; add the olive oil, sherry wine, parsley, ginger and red pepper flakes to the bowl and mix the ingredients well. Preheat a charcoal or gas grill to medium-high. Grill until liver is browned, for about 3 minutes per side. Do not overcook; it should be still pink inside. Remove from grill to a serving platter, sprinkle with salt and pepper and tent with foil for about 10-15 minutes; then, if you like, slice into thinner slices on a bias.

To grill liver, it gets a quick marinade in olive oil, salt and dried Greek oregano then it gets quickly grilled over high heat. After resting, the thinly slice the liver, pile on a plate, drizzle more olive oil, sea salt and fresh ground pepper and serve with some pickled onion. When grilling or sauteing liver, you want to cook to medium. Pre-heat your grill to high, brush and clean the grill surface, and apply oil on the grill surface or use cooking spray to lubricate your grill surface. Place your pieces of liver on the grill and cook for 2-3 minutes a side. Don’t have a grill, use a cast iron pan or a grill pan on your stove top.
