It is the national dish in Senegal. The version of tiep called thieboudienne, ceebu jën or chebu jen is prepared with fish, broken rice and tomato sauce cooked in one pot. Originally from Senegal, the traditional recipe includes fish, rice, tomato and onions. Thieboudienne is sometimes called benechin in Senegal which means 'one pot' in Wolof. The dish is considered an intangible cultural heritage of humanity.

This dish of fish and rice is so much more, it truly bursts with exceptional flavor. Thieboudienne can be made with an assortment of different vegetables so you can easily use what you like or have on hand. Just remember when making this amazing, flavorful dish, that it is totally adaptable. It should be served and eaten on a large communal platter. Thieboudienne calls for a few unique ingredients. Smoked fish is one which adds great flavor. Another is a spice called netetou which is a fermented bean that is ground up. You can use any type of white firm fish you like but grouper or snapper would be most authentic.
