Creamy and sweet, thiakry is a mix of yogurt, millet, and sugar or cinnamon. It reminded us of sweetened yogurt sprinkled with wheat germ. The thiakry made a delicious dessert after a fry-stuffed burger: sweet and creamy and speckled with millet, which had the consistency of couscous but slightly chewier. Alternatively, The Dakar-based Jaboot brand of thiakry can be found in refrigerated cases in just about any grocery store. It’s hugely popular among locals for a quick and sweet breakfast, but although we enjoyed it on numerous occasions, it’s definitely much sweeter—and with chewier grain—than the homemade version we tasted at Chez Joe.

Thiakry is similar to a rice pudding but this version is made with millet. It is not too sweet and flavored with vanilla, orange blossom water and nutmeg. This dessert is very similar to rice pudding and is just as comforting. Thiakry can easily be made plant paradox friendly. It came out exceptional.

Thiakry is a couscous pudding which is arguably a dessert food, but we decided we’d make it for breakfast because the recipe we found first seemed relatively healthy and hearty. We liked it, but didn’t love it. Adding the full quota of sugar might have made it more enjoyable as a pudding, and using vanilla seeds instead of extract would have made the flavours more balanced. We really do have no idea whether this is even close to the original dish, though. Other recipes that use a lot of condensed milk, which admittedly sounds more delicious, so we’re not sure which is correct. Probably the condensed milk version… maybe we’ll have to make it again.

Thiakry is a sweet, creamy and yogurt based dessert. The millet granules are mainly mixed with milk, sweetened condensed milk, or yogurt. I personally no longer need sweetener because of the condensed milk. But if it is not sweet enough, feel free to add more sweetener to taste.

Thiakry is a sweet, creamy and mildly tangy dessert that is mostly native to Senegal and Gambia. I could tell you that it is an elevated tapioca pudding, but I would not be doing this dish much justice; it is significantly better. It can be topped with mangoes, raisins, coconuts or chopped nuts. Traditional Thiakry is made with a millet couscous, and nothing compares to the traditional version.
