It is quite adaptable too – just like porridge; you can add any topping of your choice. Serve and top with banana and mango or your favourite toppings. It is traditionally made with millet, evaporated milk, sweetened condensed milk, yogurt, sugar and spices. You may need to add more yogurt or milk if it becomes too thick before you are ready to eat. It is consumed as a snack, dessert or sometimes breakfast. This recipe was inspired by Thiakry; a dairy based dish which is eaten across West Africa. It looks like rice pudding and is traditionally made with millet, evaporated milk, sweetened condensed milk, yogurt, sugar and spices. This delicious breakfast couscous is mildly sweet, with some tanginess from the yogurt, and some aromatics from cinnamon and nutmeg.

Thiakry is lovely served with grilled pineapple, shredded coconut and yogurt. However, you can serve this with any kind of fresh or dried fruit, including mango, banana or dried apricot. Thiakry is particularly delicious when topped with grilled pineapple. Serve thiakry topped with grilled pineapple, yogurt and shredded coconut.

Thiakry can be garnished with nutmeg. Thiakry is not too sweet and flavored with vanilla, orange blossom water and nutmeg. I used swerve for the sugar and unsweetened cherries instead of raisins. I also used organic sour cream and evaporated goats milk. In a medium bowl, combine cooked millet with sour cream, evaporated milk, raisins, sugar, vanilla and orange blossom water. Stir in butter, then sprinkle with nutmeg. Thiakry is a true Senegalese comfort food. Thiakry can easily be made plant paradox friendly.
