Thiakry is a sweet, creamy and mildly tangy dessert that is mostly native to Senegal and Gambia. I could tell you that it is an elevated tapioca pudding, but I would not be doing this dish much justice; it is significantly better. Traditional Thiakry is made with a millet couscous, and nothing compares to the traditional version. It can be topped with mangoes, raisins, coconuts or chopped nuts.

Thiakry is a dairy-based dish that is eaten across West Africa, particularly in Senegal and Gambia, where it is often sold by street vendors. It is consumed as a snack, dessert or sometimes breakfast. Thiakry is known by different names across the West African region, such as Thiakiri, Degue, Chiakiri, Chakri, etc. It looks like rice pudding and is traditionally made with millet, evaporated milk, sweetened condensed milk, yogurt, sugar, and spices. It is not as runny, and certainly not as rich or sweet as the original West African dessert.
