In Burkina Faso, it is known as bissap, in Nigeria it is known as zobo, but trust me, they’re basically the same drink made from hibiscus leaves. A very healthy and nutritious drink perfect for the hot season, bissap is so easy to prepare at home with minimal ingredients. Most people who make this drink consider pineapple as a must. However I’m glad to share with you a perfect bissap recipe without pineapples, and tastes so good. Some things though need to be noted in having a successful, delicious, sparkling bissap drink. Don’t skip the mint leaves, this enhances and adds to the delicious aroma of the hibiscus leaves. Add a dash of baking soda, this breaks down the sour taste of the hibiscus leaves. Don’t cook for too long.

Bissap, also known as hibiscus sabdariffa, is a plant used to prepare a refreshing and tangy drink popular in many African countries. The infusion of hibiscus flowers (bissap) helps support digestion. In 2010, researchers from the University of Oslo published in the Nutrition Journal the results of a study carried out on the antioxidant qualities of 283 drinks. To everyone's surprise, it was not green tea that reaped the laurels, but… hibiscus. Hibiscus is therefore a natural antioxidant, and protects the human body against what are called free radicals. Bissap is a drink rich in vitamin C and iron, two necessary and important elements in the fight against anemia.

Bissap is also found in Egypt and neighboring Sudan. Bissap is the national drink of many tropical African countries. It is also very popular in Egypt and Sudan, where it is known as karkade. Different names for hibiscus flower juice: Pink tea from Abyssinia. The name bissap comes from Senegal, the tea of the Empire. Karkadé or Bissap is a surprisingly refreshing drink, which you can refine according to your taste (more or less sweet, with spices, etc.). Botanically speaking, the hibiscus flower comes from a herbaceous plant in the Malvaceae family. It comes in over 30,000 varieties and grows mainly in the tropics, particularly in Guinea, where it originated, hence the name Guinea sorrel (Hibiscus sabdariffa). What is Bissap or Karkadé? Central Africans call it karakandji, Cameroonians foléré, while Mexicans call it "Jamaica flora".

I had been meaning to try a recipe for hibiscus water by Pierre Thiam ever since I realized it’s the same thing as hibiscus tea. Bissap is popular throughout West Africa where it’s called “bissap” and Mexico where it’s know as “Agua de Jamaica.” As I researched making my own bissap I found lots ways to tweak Pierre’s base recipe. Also known as roselle, hibiscus is native to West Africa, and hibiscus water is one of Senegal’s most popular beverages. Through the slave trade, it arrived in places like Mexico and Jamaica, where it quickly became very popular. Today, Senegal remains among the world’s largest producers of hibiscus.
