Bissap, a purple-red juice made from dried flowers of the hibiscus, is the national drink of Senegal. A cold drink on a hot afternoon is always a delight, and bissap was the perfect tonic for Dakar’s heat and humidity. I asked Stanley the bartender for a bissap-based cocktail. He proposed Évasions, made from bissap, whiskey, and lime juice. I highly doubt that my Senegalese friends would welcome the addition of whiskey to their national drink, but Évasions is true to its name. At first sip, I tasted the slight tartness of bissap, which is easily remedied by a sweetener. Perhaps Stanley should have been less generous with the whiskey. The hibiscus is a tropical plant whose many virtues are celebrated from Haiti to Malaysia. Bissap is not inherently alcoholic, but it can be mixed with alcohol to create a cocktail.

I liked the idea that I can control the level of sweetness and play around with adding ingredients like ginger, turmeric, cinnamon, and other fruits. You can also make this recipe without alcohol and consume only the juice, which is very refreshing. Serve (or not) with ice cubes and one or more fresh mint leaves. Finally, add the white rum and lime juice.
