Some chefs insist on soaking in salt and lemon water. Others opt to soak in ice water or milk to lessen the intensity from an older animal. Others suggest that you should never soak a fresh liver and that its quick preparation is part of the appeal. Chicken livers are sometimes soaked in buttermilk for adding a more complex flavor. Also fairly common among liver recipes is to sear on fairly high heat, usually after breading or dipping the liver in flour. This will retain juices within and cook quickly. Start with the liver at room temperature, and do not crowd the pan. Liver should be pink in the middle and is done when juices run clear. All proper preparations encourage generous quantities of fat in cooking and serving. This maintains the moisture of the liver and ensures good absorption of the nutrients.

The key is to slice and soak the liver the soaking removes the pungent taste. After soaking, the liver is battered, fried, and dipped in garlic aioli -- it’s a crowd-pleasing, crunchy preparation. Slice liver into 1/4 - 1/2 inch wide strips. Place into food storage container and cover with buttermilk, milk, or whey. Drain liver and pat dry. To batter the liver, roll one slice in seasoned flour, dip in milk, and roll in flour again. The liver will cook quickly. Using tongs, slowly flip each liver slice after 1.5 - 2 minutes. Cook another 1-2 minutes and transfer to cooling rack.

Soak the liver in milk to cut down on the liver’s bitterness. You’ll need to make this homemade liver and onions recipe. Soak the liver in milk. Cook the onions in butter, then set aside. Coat the liver in flour and cook in butter. Return the onions to the skillet and continue cooking. I soaked my liver for about 6 hours in milk, and I sautéed my onions before cooking the liver, but other than that followed the directions exactly. The soak in milk is key.

Here’s the biggest thing I can share - don’t overcook it. You want a bit of pink - no more, no less. Unwrap the beef liver and lay flat on a layer of paper towels. Soak the liver in a dish or bowl of milk for 30-60 minutes. Dice bacon and fry in 2 tablespoons of butter in a large skillet. When the butter is melted, add half the liver slices. Cook until you start to see the edges cooking. They’ll turn from red to gray. When that border is a few millimeters thick (2-3 minutes, or so), flip them over. Fry on the second side for another 2-3 minutes. Until you know how you like your liver, the best way to check is to cut into it. If it’s still red, keep flipping until it is just barely cooked through. You want just a tinge of pink so it’s cooked but still tender.
