Musakhan, also known as muhammar, is a Palestinian dish composed of roasted chicken baked with onions, sumac, allspice, saffron, and fried pine nuts served over taboon bread. Originating in the Tulkarm and Jenin area, musakhan is often considered the national dish of Palestine. The dish is particularly popular among Palestinians and Jordanians. Musakhan is traditionally cooked during the olive harvest season. Many of the ingredients used—olive oil, sumac and pine nuts—are staples of Palestinian cuisine. The dish is typically eaten with one's hands.

Maqluba is the national dish of Palestine. This layered one-pot dish has many versions, but the basic principle is to turn it upside down before serving, which is what the word maqluba means. The ingredients include rice, vegetables (often carrots, potatoes, tomatoes, cauliflower, onions), herbs and spices, and meat such as chicken or lamb, although the dish can be made without any meat. The ingredients are cooked and layered, then boiled until there's no liquid left. Before serving, maqluba is flipped upside down, and it's then often garnished with pine nuts or chopped parsley on top. It's recommended to serve the dish with a cucumber and tomato salad, olives, and yogurt on the side.

Palestine is frequently featured on the news, but rarely for its culture and cuisine. This is a missed opportunity, as Palestine’s location in the Levant region of the eastern Mediterranean means it is vibrant with spices and seafood, alongside an abundance of vegetables. However, the one dish that unites all Palestinians is Mushakhan or Mshakhan, with some considering it the national dish. Mushakhan consists of Palestinian flatbreads, topped with onions and beautifully spiced roasted chicken, featuring my favorite spice – Sumac. Mushakhan is to be shared, making it the ultimate choice for impressing guests at your next party or picnic. The fondness for this dish goes beyond borders, as it is popular in neighboring countries like Jordan and Lebanon too.
