It’s a homely and hearty dish, that cooks in a single pot, does not take much time, but is sure to win hearts. This recipe is vegan and you can choose the vegetables that are locally available during the season. It’s great to add carrots, beans, or even substitute potato with sweet potatoes. Güveç is a Turkish stew prepared with a mix of different vegetables, primarily with eggplant and zucchini, cooked in a traditional clay dish. It is very much like a French ratatouille, which you may have eaten before. What makes this dish so simple is that it requires very few ingredients, no unusual herbs or spices, and the prep time is super quick! Although it tastes like a slow-cooked stew that has been simmering on the stove for hours, it takes just about an hour from start to finish. Another plus is that it is a one-pot meal, so you will not spend your entire day cleaning up afterwards. I love this dish! It is colorful, bright, and delicious, but super easy and quick. Not only that, but it is comforting and light and the same time. The vegetables used in Güveç, such as eggplant and zucchini, are generally considered healthy.

I love the all in one pot casseroles and “tencere yemekleri” in Turkish cuisine; they are wholesome, easy and healthy meals and great for entertaining and many options included at my cookery book, Ozlem’s Turkish Table, Recipes from My Homeland. I hope you enjoy this delicious, tender and healthy guvec It is a bountiful dish and a great crowd pleaser, the leftovers also freeze well. For a vegetarian version, simply omit the meat. Mushrooms would work really well here instead of meat.
